Almond Chunk Pumpkin Cookies

_20151014_1922411 cup steamed (or canned) pumpkin puree
1/2 cup brown sugar
1/2 cup coconut oil or soft butter
1 egg
1 tsp baking soda
2 tsp baking powder
2/3 cup chopped almonds
2 cups flour
1 tsp cinnamon
1 tsp vanilla
1/2 tsp salt
1/4 cup pumpkin seeds and/or whole almonds.

1) Mix egg with sugar.
2) Add oil and pumpkin and beat well.
3) Add sifted dry ingredients and mix well.
4) Drop by teaspoonfuls on a greased (or parchment paper lined) baking sheet.
5) Decorate cookies with almonds and/or pumpkin seeds.
6) Bake 10-12 minutes at 375 deg.F or 180 deg.C.
7) Cool 5 minutes and remove to a cooling rack.
