Apple Bread Pudding


INGREDIENTS for two servings
2 day old bread rolls
3/4 cup milk (or almond milk)
1 egg plus one egg yolk
1/4 cup (50 gr.) sugar
1 large cored and unpeeled organic apple
2 tbsp. raisins or cranberries
1 tbsp. pine nuts
grated lemon rind
cinnamon

PROCEDURE
1. Slice each roll into 3 or 4 slices.
2. Beat together the milk, eggs, half the sugar and lemon rind.
3. Slice the cored apple thinly (horizontally).
4. Soak the slices of bread in the milk-egg mixture for a few minutes until soft (or overnight in the fridge).
5. Butter a baking dish and reassemble the bread rolls, alternating the slices with the apples, cranberries, pine nuts and cinnamon. Sprinkle each slice with the remaining sugar.
6. Pour the remaining milk-egg mixture over and bake the pudding in a preheated 350deg F (170deg C) oven for 45 min.
7. Half way through baking, cover the apple pudding with aluminum foil.
8. Serve warm or cold. Sprinkle with powdered sugar if desired.
