Apple Fritters


Bakery windows are crowded with all sorts of fried pastries. This is a homemade version of them.

INGREDIENTS (about 12-14 fritters)
2 medium unpeeled and cored organic apples sliced 1/4″ thick
fresh lemon juice of 1/2 lemon
2 tsp.sugar

for the batter:
1 large egg
1 tbsp. sugar
50 gr. almond milk (or any other milk)
grated rind of an organic lemon
100 gr. all purpose flour
a pinch of salt
1 1/2 tsp baking powder (or 1 tsp. baking powder + 1/2 tsp. cream of tartar)
for dusting: powdered sugar or granular sugar with cinnamon

PROCDEDURE

1. Sprinkle the sliced apples with the lemon juice and sugar in a large bowl. Set aside.
2. For the batter beat the egg with the milk, sugar and lemon rind.
3. Combine the flour with the baking powder and salt and mix it into the milk mixture until smooth.
4. Heat about 2-3 inches of oil in a deep pan until a toothpick inserted sizzles (375eg F). Keep the flame medium.
5. Dip the apples into the batter to cover them. Let excess drip away. Place three fritters into the hot oil.
6. Turn them as soon as they are a deep golden color (about 1 minute), continue with the other side.
7. Remove the fritters to a paper towel covered tray to drain. Dust with powdered sugar or a cinnamon/sugar mixture.

TIP These are delicious hot or warm. If planning to serve them the next day don’t dust them with sugar. This way they reheat nicely and stay crisp. Then you can dust them if you wish.
