FRUIT FILLING:
3 cups sliced plums
3 cups thinly sliced apples
2 tbsp. lemon juice
1/2 cup sugar
SHORTCAKE TOPPING:
2 cups all purpose flour
3 tbsp. sugar
2 tsp. baking powder
pinch of salt
1/3 cup butter (part coconut oil OK)
1 large egg
1/2 cup milk
3 tbsp. sliced almonds
1/2 tsp. cinnamon + 2 tbsp. sugar
PROCEDURE
1. Mix sliced apples with the lemon juice.
2. combine the sliced plums with the sliced apples and sugar.
3. Pour into a buttered baking pan. Set aside.
4. Whisk together all of the dry ingredients except almonds and cinnamon /sugar mixture.
5. Rub in the butter to form a crumbly mixture.
6. Beat the egg and milk together. Add to the dry mixture and quickly mix to form a soft dough.
7. Drop the dough by tablespoon onto the fruit mixture.
8. Sprinkle with the cinnamon/sugar mixture and the almonds.
9. Bake in a preheated 375deg F (180deg C) oven for about 35 to 40 minutes or until golden.
