Avocado Egg Sandwich

Half an avocado, peeled, sliced and sprinkled with lemon juice.
one fresh egg
One thick slice of bread, toasted (pumpkin bread is especially good here)
Salt and pepper

1. Prepare the avocado, set aside.
2. Boil some water in a saucepan adding a little salt and a tsp of white vinegar.
3. Break an egg in a cup and quickly slide it into the boiling water.
4. Gently simmer for 3 minutes, gathering the whites around the yolk. Remove with
a slotted spoon when done.
5. Place avocado slices on the bread and top with the poached egg.
6. Season with salt and pepper and serve immediately.
