INGREDIENTS
1/2 chicken cut into pieces
10 medium red and green sweet chili peppers (called frigitelli in Italy)
a few cherry tomatoes
fresh rosemary
3 cloves of garlic halved
salt and pepper to taste
olive oil
PROCEDURE
1. Arrange all the ingredients on a parchment paper lined baking tray. (greased with olive oil)
2. Salt and pepper the chicken and peppers.
3. Scatter over rosemary and garlic. Generously spritz all with olive oil.
4. Bake in a preheated 180deg C oven for 60-80 minutes or until golden and done.
5. Serve hot with fluffy basmati rice if desired.
