Cocoa Pear Cupcakes

 

INGREDIENTS

130 gr flour (part spelt is good)
60 gr. sugar (about 1/3 cup)
3 tbsp unsweetened cocoa powder
50 gr butter
60 ml (1/4 cup) kefir or yogurt
2 eggs
1-2 pears thinly sliced
few drops vanilla essence
2 1/2 tsp baking powder
pinch of salt

PROCEDURE

1. Beat the eggs and sugar until fluffy.
2. Beat in the melted butter.
3. Gradually mix in the milk or kefir.
4. Sift the remaining dry ingredients together and mix into the above liquid mixture.
5. Fold in the thinly sliced pears.
6. Fill 12-14 wax paper lined cupcake tins.
7. Bake 15-20 minutes in a preheated 180deg C oven. Test with a toothpick if done.
8. Turn out to a cooling rack.
