Easy Bulgur Salad

_20160805_152638INGREDIENTS (for four)

1 cup bulgur
2 cups water with 1/2 tsp salt added
1 to 2 cups cherry tomatoes cut in fourths
a small bunch of parsley, finely chopped
1 crushed garlic clove
juice of one lemon
4 or five fresh basil leaves
1/2 tsp salt
1/4 to 1/2 cup extra virgin olive oil
optional: a few chopped fresh mint leaves

PROCEDURE

1. First prepare the bulgur: Add it to the salted boiling water simmer for 10 minutes.
2. Remove from heat and cover. Set aside. When time is up, remove cover and fluff up with a fork.
3. Place the hot bulgur in a large bowl and let cool.
4. In the meantime prepare the parsley sauce: mix parsley with the olive oil, lemon juice, salt and clove of garlic (to be removed later).
5. When bulgur is cooled but still tepid, mix in the parsley sauce (minus garlic), chopped tomatoes and chopped basil leaves. Either serve it tepid or cold later.
