INGREDIENTS for 18 squares
Crust
1 cup all-purpose flour
1/2 cup oatmeal
1/2 cup firmly packed brown sugar
1/2 cup soft butter
Filling
3/4 cups sugar
4 cups (16 oz.) pureed pumpkin
2 – 1/2 cups cream (or 13 oz. evaporated milk)
2 eggs
1 tsp. cinnamon
1/2 tsp. salt1/2 tsp. ginger
1/4 teaspoon grated nutmeg
1/4 tsp. cloves
2 tsp. cornstarch
grated rind of 1 (organic) orange
Optional: walnuts and fuju persimmon for decoration
PROCEDURE
1. Preheat oven to 350deg F (180deg C)
2. Combine all crust ingredients and beat at a slow speed until crumbly. (can be done by hand also)
3. Press on bottom of a 13×9″ parchment lined baking pan.
4. Bake for 15 minutes.
5. In the meantime combine all the filling ingredients (except decorations) in a food processor or blender.
6. Blend until smooth.
6. Pour over the hot crust and continue baking for another 25-30 minutes or until center is slightly firm.
7. Cool and decorate if desired. You could punch out stars in the fuju persimmon slices with a star cutter.
