- 1 heaping cup 5 grain unsweetened organic cereal flakes
- 2 cups skim milk
- /4 cup greek yogurt
- 2 eggs divided (beat egg whites)
- 2 tsp. baking powder
- 1 scarce tsp. salt
- 2 tsp. sugar
- 1 cup spelt (or whole wheat flour)
- 1 tbsp. melted butter
- Soak grains in the milk overnight .
- Next morning add beaten egg yolks, yogurt and melted butter.
- Mix baking powder, sugar and salt into flour.
- Add flour to cereal mixture and mix (don’t overmix).
- Fold in beaten egg whites.
- Brush hot waffle iron with melted butter or vegetable oil.
- Pour about 3 heaping tablespoonfuls onto waffle iron and bake to desired brownness.
- Serve warm with fresh fruit and honey or syrup.
