Five Grain Spelt Protein Waffles

  • 1 heaping cup 5 grain unsweetened organic cereal flakes
  • 2 cups skim milk
  • /4 cup greek yogurt
  • 2 eggs divided (beat egg whites)
  • 2 tsp. baking powder
  • 1 scarce tsp. salt
  • 2 tsp. sugar
  • 1 cup spelt (or whole wheat flour)
  • 1 tbsp. melted butter
  1. Soak grains in the milk overnight .
  2. Next morning add beaten egg yolks, yogurt and melted butter.
  3. Mix baking powder, sugar and salt into flour.
  4. Add flour to cereal mixture and mix (don’t overmix).
  5. Fold in beaten egg whites.
  6. Brush hot waffle iron with melted butter or vegetable oil.
  7. Pour about 3 heaping tablespoonfuls onto waffle iron and bake to desired brownness.
  8. Serve warm with fresh fruit and honey or syrup.
