INGREDIENTS for one generous or two small servings
2 tbsp. freshly ground flax seeds
1 tsp honey
2 tbsp. flax seed oil
juice of 1/2 of fresh organic lemon
3-4 tbsp. quark cheese or fresh goat cheese (soft like ricotta)
1/4 cup (un-homagenized if possible) milk, or goat milk
2 tbsp. unprocessed cereal flakes (oatmeal, rice, buckwheat)
1/2 tsp. cinnamon
1 tbsp. organic nuts (not peanuts though)
1/4 cup fresh fruit in season (apples, blueberries, raspberries, etc.)
additional milk to thin out if desired (almond milk ok)
OPTIONAL: fresh berries, chia seeds, lecithin, brewers yeast flakes to sprinkle on top
PROCEDURE
1. Mix the first four ingredients together in the order that they appear (up to lemon juice) in blender.
2. Add the rest and blend until smooth.
3. Serve immediately with optional ingredients on top if desired.
