Fluffy Rice Pudding


….once you make it you won’t need a recipe. It’s so versatile with an infinity of toppings.
INGREDIENTS

1/2 cup (80 gr.) rice
2 cups milk (almond or mix of the two)
vanilla essence
1/3 cup ground almonds
2 tbsp sugar (or to taste)
1/2 cup fresh cream (whipped)
optional: cinnamon
fresh berries of your choice

PROCEDURE

1. Bring the milk to a gentle boil.
2. Add the salt and rice. Cover and cook on a low flame for 30 minutes, mixing frequently.
3. Add a little more milk if the mixture dries out too much.
4. Remove from the heat source, add a few drops of vanilla essence, sugar and ground almonds. Mix well.
5. When mixture is cooled transfer it to a covered container and place in the fridge for at least 3 hours.
6. Fold in the whipped cream. Divide the mixture into 4 serving bowls and top with your preferred fruit or cinnamon.
