Focaccia di Recco

2 1/2 cups (300 gr.) flour
1 lb.(400 gr.)Crescenza cheese
1/4 cup extra virgin olive oil
salt to taste

1. In a large bowl make a well in the center of the flour.
2. Pour in about 2 tbsp. of the oil and 1/2 to 3/4 cups water.
3. Mix well to make a soft dough. Knead until dough leaves sides of bowl.
4. Gather into a ball, cover and let rest for about an hour.
5. Preheat oven to 230deg C (450deg F).
6. Knead the dough again briefly and divide into two parts.
7. Roll one piece as thin as possible and place into an oiled baking pan.
8. Cover the surface with the crescenza cheese cut into small pieces.
9. Cover prepared surface with the other piece of dough rolled very thin. Pinch edges together.
10. Prick the surface and brush with the remaining oil. Bake for 15-20 minutes until golden.
