3 slices toast bread, each cut into 4 triangles
3-4 large shrimp, peeled and deveined (raw or cooked), finely chopped
thin slice of scallion, finely chopped
pinch of garlic powder
pinch of pepper flakes
2 thick stalks of celery, finely chopped
2 tsp soy sauce
2 small slices fresh ginger, finely minced (or a pinch of ginger powder)
1 egg beaten with 2 tsp flour or cornstarch
1/2 cup finely grated bread crumbs or sesame seeds
1. Mix all the ingredients (except bread crumbs or sesame seeds) into the egg mixture.
2. Spread one side of each triangle with the shrimp mixture.
3. Sprinkle the bread crumbs (or sesame seeds) over the toast triangles, pressing down firmly with fingers so mixture adheres.
4. Fry for 1 1/2 to 2 minutes per side in hot oil (barely covering pan with the oil). Start on the shrimp mixture side first. They should be golden brown. Drain on paper toweling.
5. Serve hot.
