Granola Energy Bars

_20160426_0910561- 1/2 cups (180 gr.) oatmeal flakes
1 cup (100 gr.) chopped nuts (walnuts, pistachios or a combination)
1/2 cup (50 gr.) sunflower and pumpkin seed mixture
1/2 cup (50 gr.) chia seeds
1/2 cup (80 gr.) dried cranberries or blueberries (or raisins)
1/2 cup (80 gr.) chopped dates or figs
1/3 cup (50 gr.) dried coconut
1 tsp. cinnamon
1/3 cup coconut oil
1/3 cup sunflower honey (or a honey of your choice)
2 tbsp. light brown sugar

1. Preheat oven to 180deg.C/350deg.F
2. Line a 20x30cm (9×12″) pan with greased wax paper.
3. Combine the oats and seeds and toast in a baking pan for about 10 minutes.
4. Tip into a large bowl and mix in the rest of the ingredients except for the oil, honey and sugar. Mix the latter in a small pan and melt together on a low flame until it comes to a boil. Remove from the flame.
5. Pour over the dry mixture and combine well.
6. Scatter the mixture into the pan and press down flat with the back of a large spoon.
7. Bake for about 20 – 30 minutes or until golden.
8. Remove from the oven and allow to cool completely before cutting into bars or squares.
9. Store in an airtight container or tin. Will keep for several days.

Tip: For an instant “crumble”, crumble the bars over some stewed apples or even applesauce.
