Green Bean Hummus with Mint

INGREDIENTS
for the hummus:
150 gr. steamed fresh green beans (cooled)
1/2 garlic clove
juice from 1/2 squeezed lemon
a bit of grated lemon rind
a few mint leaves
1 tbsp olive oil
salt to taste (1/2 tsp)

Fresh bread such as wholegrain or turmeric
Stracciatella or other fresh and soft cheese

A few mint leaves for decoration

PROCEDURE

1. Blend all the hummus ingredients together until smooth.
2. Spread the green bean hummus over the bread slices (toasted if desired)
3. Top with a dollop of fresh cheese. Decorate with mint leaves.
