Mix together and set aside:
2 tbsp. freshly ground flax seeds
2 tbsp. water
1 cup quinoa
1 1/2 cups water
PROCEDURE
1. Simmer quinoa and water (covered) for 10 minutes.
2.Fluff with fork and mix in the soaked flax seed mixture.
3.Press into an oiled or buttered pie pan.
4.Bake for 30-35 minutes in a 375degF (180degC.) oven.
TIP> for a filled pie, bake the crust at 400degF (190deg.C) for ten minutes, then fill and continue baking until done . Here I filled it with a zucchini and ricotta filling. You can find the recipe in my Aug. 28, 2016 post “Basic Vegetable Quiche”.
