Light and Easy Jelly Roll

INGREDIENTS

2 large eggs
1/2 cup powdered sugar
1/2 cup flour
1/4 cornstarch
1/4 cup warm water
a few drops vanilla essence
3/4 tsp baking powder
pinch of salt

about 1/2 cup jam or jelly or a filling of your choice
powdered sugar for dusting

PROCEDURE

1. Beat eggs with sugar until fluffy and light.
2. On low speed mix in water and vanilla.
3. Mix in dry ingredients (sifted together) on low speed until smooth.
4. Spread batter over a wax paper lined cookie sheet.(35X25 cm)
5. Bake 12-15 minutes testing with a toothpick.
6. Immediately invert pan over a clean dish towel sprinkled with powdered sugar.
7. Carefully peel off the wax paper and roll up the cake from the narrow end.
8. Cool on a wire cooling rack.
9. When cool unroll the cake and remove the towel. Fill with jelly and roll up again. Sprinkle with powdered sugar.
