Light Apple Chocolate Torte

INGREDIENTS

500 gr. apples (about 3 medium)
150 gr. dark chocolate (70% minimum)
40 gr dark muscovado sugar
3 eggs
50 gr. semi wholewheat flour (or spelt)
1/2 packet baking powder
1 tsp. vanilla extract
pinch of salt

PROCEDURE

1. Chop peeled apples into small pieces.
2. Place the apples in a pan with 3 tbsp. water and cook for 25 minutes until soft. Puree’ or mash. Set aside.
3. Melt the chocolate in a double boiler. Cool.
4. Sift the flour with the baking powder and salt.
5. Beat the eggs and sugar until fluffy. Mix in the prepared flour mixture until smooth.
6. Mix in 200 gr. of the cooled apple puree’ – then mix in the melted chocolate.
7. Pour the batter into a small cake pan (18-20 cm) with removable sides and lined with wax paper.
8. Bake for 25 minutes in a 180deg preheated oven. Cool before removing from pan. Serve with whipped cream.
