Light poached chicken with vegetables and apples

1 medium raw beet sliced into slivers
1 large raw carrot cut into sticks
1 large sliced golden delicious apple sprinkled with lemon juice
1 finely cubed celery stalk
2 tbsp vinaigrette (olive oil, vinegar, salt/pepper mixture)
optional: 1 tbsp soaked raisins or craisins

Slice the cooked chicken breast and arrange it on a serving plate surrounded with the vegetables and apples. Sprinkle with the vinaigrette and raisins if desired. Serves 2-3.
