This recipe is very simple and self explanatory so I’ll only list the ingredients which are all fresh except for the quinoa which is cooked of course (although very quickly!). The quantities are left up to you:
Fresh marinated salmon
raw grated turnip (or marinated white onion)
a few pink grapefruit sections with membranes removed
one cooked quail egg
water cress as a garnish
extra virgin olive oil
1. Arrange all the prepared vegetables and a small mound of cold cooked quinoa around the salmon.
2. Place the cooked and peeled quail egg in the center. Add the grapefruit sections.
3. Pour a little olive oil around the plate and serve cold.
