INGREDIENTS
80 gr. (1/3 cup) soft butter
1/2 cup peanut butter
1/4 cup honey (slightly less ok)
1/4 cup powdered sugar
1 egg
a few drops vanilla extract
3/4 cup flour
1/2 cup oatmeal
1/4 cup rice flour
1 tsp baking soda
optional – 1/4 cup dark chocolate chips
PROCEDURE
1. Whisk together dry ingredients. Set aside.
2. Beat butters with sugar and honey.
3. Beat in egg until mixture is fluffy.
4. Stir in the dry ingredients and chocolate chips (if using).
5. Cover and chill dough in the fridge overnight. Dough will be very soft but will firm up by the next day.
6. The next day drop by teaspoonfuls onto a wax paper covered cookie sheet and flatten with a fork.
7. Bake cookies at 350deg F (370deg C) for 10 minutes. When done remove them to a cooling rack.
