INGREDIENTS
Jam:
Cover 1/2 cup pitted and chopped prunes with 1 cup boiling water. Let sit for 1 hour, then drain and puree in a blender to a smooth consistency. Cool and set aside.
Pecan Prune Loaf
1 3/4 cups (250 gr.) organic spelt flour
2 tsp. baking powder
1/4 tsp. baking soda
1/2 tsp. ginger powder
1/2 tsp salt
1/3 cup fine cane sugar (or brown sugar)
1/4 cup mild olive oil
2 large eggs
1/4 cup of the prepared prune puree
3/4 cup yogurt of kefir
1/3 cup roughly chopped pecans
PROCEDURE
1. Sift dry ingredients together (except sugar).
2. Beat eggs and sugar until fluffy. Then mix in prune puree and yogurt.
3. Combine the above two mixtures without over mixing.
4. Fold in the chopped pecans.
5. Transfer the batter into a parchment paper lined loaf pan.
6. Bake 45-50 minutes in a preheated 180deg C (350deg F) oven.
7. Cool loaf for 10 minutes, then turn out to further cool onto a cooling rack.
8. Slice and serve if desired with the rest of the prune jam.
