Pink Spring Salad

INGREDIENTS

pink chickory salad (Trevigiana) (a few leaves)
one steamed beet, peeled and sliced
one pink grapefruit cut into sections
a bunch of rocket (rucola)
a handful of pine nuts
olive oil
salt and pepper if desired

PROCEDURE

Arrange the various ingredients as shown in the picture over a bed of pink salad. Season with olive oil and serve chilled.
