INGREDIENTS
2/3 cups spelt flour
1/3 cup almond flour
1/2 cup plain yogurt
1/2 cup milk
1 egg
1 tbsp dark brown sugar
1 tbsp ground flax seeds
1/2 tsp baking soda
pinch of baking powder
1/4 tsp salt
1 tbsp apple cider vinegar
PROCEDURE
1. Whisk together all the dry ingredients except sugar. Set aside.
2. Beat sugar and egg together until fluffy. Mix in the yogurt and milk.
3. Fold in the dry ingredients adding the vinegar in the end. Mix until smooth without over beating.
4. Lightly oil (evo) a frying pan and fry 3 to 4 pancakes at a time, turning once.
5. Serve with berries and maple syrup if desired.
