San Gerardo’s Cornmeal Cookies

  •  2 1/4 cups ( 300 gr.)  finely ground yellow cornmeal
  • 1 3/4 cups (200 gr.) white all purpose flour
  • 1 cup (200 gr.) soft butter
  • 1 cup (200 gr.) sugar
  • 2 egg yolks
  • pinch of salt
  • 2 T. milk
  • 1 tsp. grated lemon rind
  • 1 T. dried elderberry flowers (if available)
  1. Combine dry ingredients.
  2. Make a well in the center and add butter and yolks.
  3. Work together with a fork or dough blender like pie crust.
  4. Mix in milk and form into a ball taking care not to over work mixture.
  5. Roll out dough to desired thinness (the thinner, the crisper).
  6. Cut out desired shapes and bake in a moderate oven 350 F (180 C) 10-15 minutes.
  7. Sprinkle with powdered sugar if desired.
