- 2 1/4 cups ( 300 gr.) finely ground yellow cornmeal
- 1 3/4 cups (200 gr.) white all purpose flour
- 1 cup (200 gr.) soft butter
- 1 cup (200 gr.) sugar
- 2 egg yolks
- pinch of salt
- 2 T. milk
- 1 tsp. grated lemon rind
- 1 T. dried elderberry flowers (if available)
- Combine dry ingredients.
- Make a well in the center and add butter and yolks.
- Work together with a fork or dough blender like pie crust.
- Mix in milk and form into a ball taking care not to over work mixture.
- Roll out dough to desired thinness (the thinner, the crisper).
- Cut out desired shapes and bake in a moderate oven 350 F (180 C) 10-15 minutes.
- Sprinkle with powdered sugar if desired.
