Santa Lucia Cookies


This saint was celebrated as the messenger of light and the patron saint of eyesight.

INGREDIENTS

200 gr. all purpose flour
100 gr. cold butter, chopped
50 gr. powdered sugar
1 beaten egg
1/2 tsp. vanilla extract
3 tbsp. powdered sugar for dusting
Optional: grated rind of organic orange or lemon

PREPARATION

1. Whisk together the dry ingredients until combined (including citrus rind if using).
2. Rub in the chopped butter until a crumbly mixture is formed.
3. Quickly stir in the beaten egg until the dough comes together. Knead briefly. Form a ball of dough.
4. Cover dough with clear wrap and chill in the fridge for about 1/2 hr.
5. Roll out dough on a lightly floured surface to a 1/8-1/4 inch thickness. Cut our desired shapes.
6. Bake the cookies on a wax paper lined cookie sheet in a preheated 180deg C (370deg F) oven for about 10 minutes. Remove them to a cooling rack. Dust with powdered sugar or decorate with icing if desired.
