INGREDIENTS (makes 10-20 whole eclairs depending on size)
One batch of eclair shells – (recipe on my Jan. 25, 2017 post)
1 – 2 cups whipping cream, whipped (depends on size of eclairs)
1/4-1/2 cup powdered sugar
1 cup fresh raspberries
1 cup fresh blueberries
1. Slice each eclair horizontally in half scraping out some of the insides if not hollow.
2. Pipe the sweetened whipped cream into each eclair half and top with sliced raspberries or whole blueberries.
