INGREDIENTS
3 small or two large apples + 1 peach (or any combination of fruits)
Juice and rind of 1/2 lemon
1/4 tsp cinnamon
2 cloves (if desired)
1-2 tbsp honey
crumble topping
1/2 cup oatmeal
2 tbsp flour
1/4 cup chopped walnuts
1 tbsp fine brown sugar
2 tbsp cold butter
dash of cinnamon
pinch of salt
PROCEDURE
1. Thinly slice your fruit and place it in a saucepan with 1/4 cup water.
2. Mix in the rest of the ingredients and bring to a gentle boil.
3. Cover and simmer for 15-20 min or until fruit is soft. Set aside to cool.*
4. In the meantime combine the dry topping ingredients.
5. Rub in the butter to form a crumbly mixture.
6. Toast the finished mixture in a small pan on a low flame until slightly golden and crisp. Set aside.
7. When ready to serve place fruit mixture in small bowls and sprinkle it with the topping.
*if mixture is too liquid you can sprinkle in 1 tsp of cornstarch through a small sieve and continue cooking for a couple of minutes until thickened.
TIP
This dessert is good either hot or cold. Top with whipped cream or ice-cream. Great for breakfast.
