Summer Beet Soup


INGREDIENTS (for 2 or three portions)

3 or 4 medium beets, steamed and chopped
1/2 tsp. salt
dash of pepper
1 medium peeled cucumber, grated
3 grated radishes (extra for decoration)
2 or 3 small green onions, white part sliced and sautéed in 1 tbsp. olive oil
2 cups kefir or buttermilk
optional: sliced eggs, chopped dill

PROCEDURE

1. Roughly chop the cooked beets and place them in the blender together with the seasonings, sautéed onions and kefir or buttermilk. Blend until smooth. Keep chilled until ready to serve.

2. Grate the cucumber and radishes.

3. Pour the chilled soup into bowls. Top with some of the grated cucumber and decorate with a radish rose if desired.
