Sweet Potato Breakfast Loaf

INGREDIENTS

3 medium eggs
1/2 cup (80 gr.) light brown sugar
100 gr. flour (preferably spelt)
1 tbsp. baking soda
200 gr. freshly grated butternut squash
75 gr. oatmeal
100 gr. finely chopped walnuts

PROCEDURE

1. Beat eggs and sugar until fluffy and light.
2. Sift flour and baking soda and mix into the sugar egg mixture.
3. Fold in the grated squash, oatmeal and chopped walnuts.
4. Transfer the mixture into a buttered wax paper lined loaf pan.
5. Bake in a preheated 170deg C oven for 45-50 minutes until done (test with toothpick).
6. Cool for 20 minutes before turning out the loaf onto a serving plate.
