I got this Whiting Way Banana Bread recipe from my son Richard which turned out to be less sweet and healthier than the classic version. It uses half the amount of sugar which doesn’t take away any of the taste but rather enhances the banana flavor. The method also is slightly different and easier to make. With this hot weather and bananas ripening so quickly there couldn’t be a better way of using them. Bananas are also rich in magnesium and potassium – important minerals to include in summer. Nutty Chocolate Beet Cupcakes

You can’t beat these nutty chocolate beet cupcakes in healthiness with any other chocolate dessert that I can think of. You’re practically having your vegetable and dessert at the same time! And the rich chocolate flavor doesn’t reveal the “mystery” ingredient at all – the beets actually seem to enhance it making the cupcake moister without hardly any fat at all – only a couple of tablespoons of coconut oil and a minimum of natural coconut sugar. Nutty Persimmon Cupcakes

The persimmon in these Nutty Persimmon Cupcakes really helps to cut down on sugar content. Actually there’s no sugar in this recipe, only a bit of honey. This fruit adds just the right amount of sweetness and as a bonus lots of healthy minerals and vitamins, especially vitamin A. There are basically three types of persimmon on the market (in Italy): the regular soft and round kind (mushy on the inside), the “apple” persimmon which is oval in shape and slightly more firm and the “vanilla” persimmon which is very firm, almost crisp even when ripe.
