Wholewheat Saffron Apple Cake

 

INGREDIENTS

1 cup wholewheat flour
1 cup all purpose flour
3 tsp baking powder
1/2 cup sugar
1/2 cold butter (chopped into small pieces)
3/4 cup almond (or other) milk
1 egg
1/4 tsp ground saffron or less according to taste
3-4 small apples thinly sliced
chopped walnuts for topping

1. Sift all the dry ingredients together.
2. Work the chunks of butter into the flour mixture until crumbly.
3. Beat the milk, egg and saffron together.
4. Pour liquid mixture into the flour mixture while quickly mixing with a fork taking care not to over mix.
5. Transfer batter into a wax paper lined baking pan (preferably with a removable rim).
6. Press apple slices over top and sprinkle with chopped walnuts (and a little sugar if desired) Dot with butter.
7. Bake in a 190deg C (400 deg F) oven for 30 minutes. Cool in pan 10 minutes before removing to a cooling rack.
