INGREDIENTS
2 cups finely shredded zucchini, drained
1 tbsp. chopped onion
pinch of oregano or thyme
2 beaten eggs
1/4 cup flour
salt and pepper to taste
1/4 cup grated parmesan cheese
olive oil for frying
PROCEDURE
1. Mix all the ingredients together.
2. Form flat patties. Dredge in finely grated breadcrumbs.
3. Fry three or four at a time in hot oil.
4. Serve hot with a fresh cheese.
Tip: delicious served with fried sage leaves.
