Light Chocolate Poundcake

INGREDIENTS

200 gr all purpose flour
50 gr unsweetened cocoa powder
2 1/2 tsp baking powder
pinch of salt
125 gr sugar (a fine light brown sugar best)
3 eggs
100 ml whole milk (almond milk ok but results in a slightly crumbly texture)
100 ml coconut oil (or other vegetable oil)
80 gr chocolate chips

PROCEDURE

1. Sift dry ingredients together except sugar. Set aside.
2. Beat eggs together with the sugar until fluffy.
3. Mix in oil and milk.
4. Incorporate the dry ingredients into this mixture until smooth. Don’t over mix.
5. Mix in the chocolate chips.
6. Transfer batter into a buttered and parchment paper lined loaf pan. Smooth top.
7. Bake in a preheated 170deg C oven for about 30 minutes or until top is firm.
8. Cool cake on a cooling rack before turning out and removing the parchment paper.
9. Serve with whipped cream and berries if desired or simply dust with powdered sugar.
