Apple Cranberry Pumpkin Crumble

INGREDIENTS

175 gr light cream cheese
400 gr steamed and pureed pumpkin
1/4 cup light brown sugar
pinch of cinnamon

1 large apple cubed
1/4 cup dried cranberries
1/2 cup flour
1/3 cup light brown sugar
1/2 cup oatmeal flakes
1/3 cup cold butter
1/4 cup chopped pecans or walnuts

PROCEDURE
1. Beat the cooled pumpkin puree with the cream cheese, sugar and cinnamon until smooth.
2. Spread this mixture into a small buttered pan. (8×8 inch).

3. Sprinkle the chopped apple and cranberries over this mixture.

4. Combine the remaining dry ingredients and rub in the butter to form a crumbly mixture. Mix in the pecans.

5. Sprinkle the crumble mixture over the apple mixture. Dot with a little butter.

6. Bake in a 170deg C preheated oven for about 35-40 minutes. cool on a rack.

7. Serve warm or cold.
