- 2 cups flour
- 1-1/2 tsp. baking powder
- pinch of salt
- 1-1/4 cups sugar
- 3/4 cup cream cheese or ricotta
- 1/4 cup plain yogurt
- 1/2 cup butter
- 3 eggs
- 1/4 cup poppy seeds
- grated rind of one lemon
- 1 tsp.vanilla
- Mix poppy seeds and yogurt and set aside.
- Mix flour, baking powder and salt.
- Beat butter, cheese and sugar until fluffy.
- Beat in eggs one at a time. Mix in vanilla.
- Mix in flour mixture alternating with the yogurt/poppy seed mixture.
- Pour into a wax paper lined and buttered pan of your choice.
- Bake at 325F. (170C.) deg. for 30-40 min.
