Poppy-seed Cake

  • 2 cups flour
  • 1-1/2 tsp. baking powder
  • pinch of salt
  • 1-1/4 cups sugar
  • 3/4 cup cream cheese or ricotta
  • 1/4 cup plain yogurt
  • 1/2 cup butter
  • 3 eggs
  • 1/4 cup poppy seeds
  • grated rind of one lemon
  • 1 tsp.vanilla
  1. Mix poppy seeds and yogurt and set aside.
  2. Mix flour, baking powder and salt.
  3. Beat butter, cheese and sugar until fluffy.
  4. Beat in eggs one at a time. Mix in vanilla.
  5. Mix in flour mixture alternating with the yogurt/poppy seed mixture.
  6. Pour into a wax paper lined and buttered pan of your choice.
  7. Bake at 325F. (170C.) deg. for 30-40 min.
