Sweet Potato Waffles


300 gr. sweet potato (steamed and mashed)
40 gr. butter or olive oil
100 gr. all purpose flour
30 gr. millet flour (or other flour of your choice)
2 tsp. baking powder
1 tsp. baking soda
pinch of salt
2 eggs
1 cup milk
1/2 cup yogurt


1. Mix the butter into the warm mashed sweet potato until combined. Set aside.
2. Sift the flours and dry ingredients together.
3. Beat the eggs until fluffy. Mix in the milk, yogurt and mashed sweet potato.
4. Mix in the dry mixture and beat until smooth.
5. Pour about 1/3 cup of batter onto a hot waffle maker. Bake according to waffle maker instructions.
6. Serve hot with maple syrup if desired.
