Chocolate Oatmeal Pancakes With Tapioca

1 cup oatmeal (uncooked)
1/2 cup tapioca (or chia seeds)
1 cup plain yogurt
1 cup almond milk
2 beaten eggs
1 tsp. vanilla extract
1/2 tsp. salt
2 tbsp. coconut oil
1/3 cup unsweetened cocoa powder
1/4 cup honey (up to 1/2 cup according to taste)
2 tsp. baking powder
1/2 tsp. baking soda
1 tsp. apple cider vinegar
coconut or light olive oil for frying

PROCEDURE

1. Mix oatmeal, tapioca, yogurt and almond milk. Let sit covered 24 hrs. or overnight.
2. Beat in the rest of the ingredients (except the last oil), and at the end the apple cider vinegar.
3. Fry 1/3 cupfuls in a hot frying pan in about 1 tbsp. of oil.
4. Serve hot. Good with maple syrup and fresh raspberries or raspberry jam. Maybe even a dollop of whipped cream.
