INGREDIENTS
200 gr all purpose flour
100 gr baby spinach
50 gr cold butter
1 tsp sugar
1 tsp baking powder
1/2 tsp salt
1 tbsp extra virgin olive oil
For decoration: 1 beaten egg white and 1 tbsp. red peppercorns
PROCEDURE
1. Sautee the spinach in 1 tsp olive oil until wilted (about 4-5 minutes). Cool and chop finely.
2. Sift the remaining dry ingredients and rub in the cold butter until mixture is crumbly.
3. Stir in the spinach and oil and work these into the dry mixture to form a ball. Knead gently.
4. Pat dough into a disc and chill half an hr in the fridge.
5. Roll out the disk to a 2-3 mm thickness. (Like cookie dough, the thinner the crisper).
6. Cut out tree shapes with a cookie cutter. Place them on a parchment paper lined baking tray.
7. Brush with a little beaten egg white and decorate with red peppercorns.*
8. Bake in a preheated 180deg C oven for 8-10 minutes. Remove to a cooling rack.
*TIP Red peppercorn aren’t actually peppers, they are milder but still quite spicy so limit the amount that you actually eat. They are used here primarily as a decoration.
