Easy and Light Tiramisu Individuals


…The only hard part i waiting for them to chill in the fridge!

INGREDIENTS for 3 or 4 servings

1 – 1/2 packets (15-20) ladyfingers (Savoiardi)
1 cup of milk
1 espresso coffee (or substitute)
1 small tub of plain yogurt
1/2 cup whipping cream whipped with 1/4 cup powdered sugar
2 tbsp. chocolate chips
1 tbsp. unsweetened cocoa powder for dusting
optional: a few drops of rum, fresh berries

PROCEDURE

1. Line up your ladyfingers and chop off the top 1/3 of each.
2. For the filling mix together the yogurt, sweetened whipped cream, and the chocolate chips. Set aside.
3. Mix the coffee into the milk in a wide and shallow bowl. Set aside.
3. Line 3 or 4 large muffin tins or ramekins with a piece of cling film overlapping the sides.
4. Dip 5 of the longer pieces into the milk mixture for an instant turning them over.
5. Place 5 of the pieces into each of the lined ramekins as shown. Add a dipped smaller piece in the bottom.

6. Now fill each prepared ramekin with the yogurt filling. Fold the top of each ladyfinger over to cover the filling.

7. Now fold the excess of the cling film over to cover the top completely. Chill in the fridge several hours – best overnight.

8. To serve, uncover the tops of the ramekins and turn them over to a serving plate – remove the rest of the cling film.
9. Dust the tops with a little cocoa powder and serve with fresh berries if desired.
