Red Moon Apple Salad

This recipe is so easy you really don’t need one. Just remember the three main ingredients: Red Moon Apples, juicy stalks of organic celery and chopped walnuts. Just cube the apples, slice the celery and chop a handful of walnuts.
Drizzle a tablespoon or two of a good extra virgin olive oil and some fresh lemon juice. Salt and pepper if you wish.
I used two apples, four stalks of celery and a handful of walnuts for two generous servings.

TIP: No Red Moon Apples? No problem, even any other juicy and tart apple will do. But of course you won’t get that fabulous color.
