INGREDIENTS for two portions
1/2 peeled and chopped cucumber
1/2 fresh fennel bulb chopped
1/2 chopped organic apple
the juice of a piece of fresh ginger (squeezed through garlic press)
4-5 chopped fresh mint leaves
1 cup (250 ml) of unsweetened coconut water
PROCEDURE
Place all the ingredients into a blender and blend until smooth. Serve immediately garnished with a fresh sprig of mint if desired. The pulp and liquid will start separating but you can drink it anyway. Otherwise give it a quick stir.
