for 2 to 4 servings:
Spelt linguine or any healthy pasta of your choice
While your pasta is boiling in salted water, place in a blender and whirl together to a smooth consistency:
1 large avocado peeled, pitted and cut into large chunks (remember to sprinkle with lemon juice)
A handful of basil leaves torn into pieces
Fresh marjoram, if you can find it – a few leaves
1/4 cup almonds or walnuts, chopped
1/4 cup grated parmesan cheese
2 tbsp olive oil
1 tbsp fresh lemon juice
1/4 cup of the pasta water (boiling ok)
1/4 to 1/2 tsp salt (pepper if you wish)
When pasta is done, drain it and mix in the above sauce. Sprinkle over each portion:
Chopped cherry tomatoes. Top with more parmesan if you wish.
