Chocolates and Almond Truffles

I forgot to post the recipe – Here it is now!


1/3 cup unsweetened cocoa powder
3 tbsp coconut oil
4 squares sweetened dark chocolate (about 1/2 small bar)
3-4 tbsp honey
1 tsp vanilla extract
1/4 tsp cinnamon
pinch of salt
3 tbsp finely chopped almonds
optional: 3-4 tbsp chopped dried cranberries or cherries

1. Gently heat all ingredients (except nuts and dried fruits) over a double boiler until melted stirring constantly.
2. Spoon into small silicon candy or chocolate molds.
3. Place into the freezer for one hour.
4. Pop out the chocolates and store in a cool (fridge ok) place.

tip: If you haven’t got candy molds you can pour all the mixture into an 8″ wax paper lined baking pan. Then cut into squares when cold. The truffles should be put into small paper muffin cups.
