Healthy Blueberry Ricotta Hot Cakes

 

 

INGREDIENTS and PROCEDURE

Beat until fluffy: One egg together with 1 tbsp. brown sugar.

Mix in: 1/2 cup ricotta combined with 3/4 cup plain yogurt

Add gradually: 1/2 cup whole wheat flour mixed with 1/2 cup all purpose flour and sifted together with 1/4 tsp. salt and 1/2 tsp. baking soda. Mix well. (or use 1 cup stone ground semi-whole wheat flour shown below)

Mix in: 1 tsp. apple cider vinegar and 1/2 cup lightly floured fresh blueberries.

Fry tablespoonfuls of batter on a hot lightly oiled pan. Flip over when lightly browned and fry other side. Serve hot with additional blueberries and/or honey or maple syrup.
