Norwegian Green Bean and Salmon Salad


INGREDIENTS  (3-4 servings)

1 lb. fresh green beans, boiled crisp tender (4 minutes in pressure cooker)
1 cup white beans (canned ok) drained
3 1/2 oz. (100 gr.) smoked salmon cut into thin strips
3-4 gherkins (baby pickles) chopped into small cubes
3 hardboiled eggs,chopped (an extra one for decorating if desired)
1/2 cup mayonnaise (half can be sour cream or greek yogurt)
1 tbsp. freshly chopped parsley
OPTIONAL1/2 tsp. finely chopped onion


1. Place chilled, sliced green beans in a large bowl.
2. Add the rest of the ingredients and toss lightly.
3. Gently mix in the mayonnaise and parsley.
4. Place into a serving bowl and decorate if desired.
5. Serve well chilled.
