INGREDIENTS (about 25-30 small cookies
1 cup regular rolled oats (whirled in a food processor for a finer consistency – not too fine though!)
1 cup all-purpose flour
1/2 cup roughly chopped walnuts
1/2 tsp baking soda
1/4 tsp salt
1 tsp ground ginger
1/2 tsp cinnamon powder
1/4 tsp ground cloves
1/3 cup soft butter or coconut oil (or a mix of the two)
1/2 cup lightly packed brown sugar
1 large egg
1/4 cup organic honey (or for stronger flavor unsulphured molasses)
PROCEDURE
!. Combine all the dry ingredients except the sugar in a bowl. Set aside.
2. In a large bowl beat the fat/fats and sugar until creamy.
3. Add the egg and honey and beat until fluffy, scraping down the sides as needed.
4. Mix in the dry ingredients until barely combined. Cover and chill in the fridge for 1-2 hrs.
5. When dough is ready roll into small walnut sized balls flattening sightly. Place them on a parchment lined cookie sheet.
6. Press in chocolate pieces and/or walnut halves if desired.
7. Bake in a preheated 180deg C oven until golden about 10 minutes. Cool in pan for about 10 min. before removing them to a cooling rack
