Grilled Pear and Mackerel Sandwich

(continued)…This healthy recipe is a go-to when you don’t feel like cooking!

INGREDIENTS for two sandwiches

1 small can water packed mackerel
1 fresh pear sliced and grilled with a bit of olive oil on a pan or grill
4 or more fresh lettuce leaves (red chicory good)
fresh spreadable cheese such as “robiola” or cream cheese
2-4 tsp toasted pine nuts
olive oil
salt and pepper
2 slices bread of your choice (whole wheat is good)


1. On a piece of bread (toasted if you wish) spread some of the soft cheese.
2. Place a couple of salad leaves on top, then the mackerel on top of that.
3. Then top with the grilled pear. Salt and pepper it.
4. Sprinkle on some toasted pine nuts and serve.
